issue: #51250 Keep TEXT segments on StorageV3 while making growing-source flush an explicit allowed mode instead of a mandatory TEXT path. Propagate create-segment storage versions through WAL flusher and write buffer, reject storage-version mismatches in DataCoord, and keep raw segcore chunks sticky for segments that may be flushed from growing source.
